Swiss Cheese Breakfast Biscuits

Ingredient List: 

1 cup regular whole wheat flour or white whole wheat flour
1 ¾ cups all-purpose flour
1 tablespoon baking powder
½ teaspoon baking soda
1 tablespoon sugar
½ cup cold butter or margarine
1 cup (4 ounces) Swiss cheese, shredded
1 tsp. minced, dried onion flakes* OR 1/3 cup green onions, diced
2 large eggs, slightly beaten
1 cup low-fat buttermilk

Directions:

*If using dried onion flakes, let sit in the buttermilk until adding it to the mixture.

Combine the dry ingredients in a large bowl. Cut in the butter or margarine until the mixture is crumbly.

Stir in the cheese.

Add the eggs, buttermilk and onion. Stir just until moistened (do not over-stir).

Drop by tablespoons 2 inches apart on greased cookie sheets. Bake at 425 0 F. for 12-13 minutes or until golden brown.

Makes: 24 biscuits (24 servings)

Nutrition: Each biscuit provides approximately: 115 calories; 4 g protein; 12 g carbohydrates; 1g fiber; 6 g fat (3.5 g saturated); 31 mg cholesterol; 32 mcg folate; .7 mg iron; 120 mg sodium.
