Mushroom and Cashew Stuffing

Ingredient List: 

3/4 pound sliced white bread, cut into ½” cubes
1/4 cup butter1 large red onion, chopped
1 large red pepper, chopped (about 2 cups)
1/2 pound button mushrooms, sliced
3 celery stalks, chopped
1 1/2 cups roasted, unsalted cashews, halves and pieces
2 tablespoons fresh thyme or 1 teaspoon dried
2 tablespoons fresh rosemary or 1 teaspoon dried
1/4 teaspoon ground nutmeg
3/4 cup canned chicken broth
2 eggs, beaten
