9 ounces cornmeal, yellow

6 ounces brown sugar
1 pound whole wheat flour
5 pounds all-purpose flour
1 1/4 ounces yeast, instant

2 quarts water, warm or 110 degrees F.

Description: For a variation, make loaves instead of rolls. Punch down dough and scale into 8 portions, 1 pound, 7 ounces each. Shape them into 8 round loaves and place them on baking pans that have been sprinkled with cornmeal. Proof them until double in size. Cinnamon Toast Sticks

Ingredient List: 

100, 1-ounce white, multi-grain or whole wheat slices of bread
Butter-flavor pan spray
1 3/4 cups granulated sugar
6 tablespoons cinnamon, ground

Directions: 
Preheat oven to 400 degrees F convection oven or 425 degrees F conventional oven.
Toast bread very lightly. Spray with pan release spray.
Combine sugar and cinnamon; sprinkle each slice with 1 teaspoon mixture.
With pan release spray, lightly spray each piece sprinkled with cinnamon sugar and toast again in hot oven, 1 to 2 minutes.
