Pound Cake, Angel Food Cake & Macaroon Chocolate Fondue

Ingredient List: 

1 1/2 cups semi-sweet chocolate chips
1/2 cup low fat or fat-free vanilla yogurt
1/4 cup half and half
1 teaspoon vanilla
2 tablespoons Amaretto liqueur
OR
1 tablespoon almond flavoring

Directions:  
Combine the chocolate chips, yogurt and half and half in a fondue pot on low (or heavy pan on the stove-top). Stir frequently until blended and warm. Add vanilla and amaretto and keep warm while serving.

Pineapple Bread Pudding

Ingredient List: 

1 cup sugar
1/2 cup butter
2 eggs, beaten
1/2 cup milk (whole or evaporated milk)
1, 20 ounce can chunk pineapple, drained, but reserve 2 tablespoons of juice
4 cups white or whole wheat bread cubed (approximately 7 slices)

Directions:  
Preheat oven to 375°F. 

Cream together butter and sugar; add in eggs, milk, pineapple and 2 tablespoons of the reserved pineapple juice. Then fold in bread cubes.

Pour into a 9 x 9-inch baking dish and bake for 45 to 55 minutes or until set. If it gets too brown, cover lightly with aluminum foil for the last 5 to 10 minutes. Serve warm.

Peach Bread Pudding

Ingredient List: 

4 cups cubed French bread
3 large eggs, beaten
2 cups fat free milk
1/2 cup granulated sugar
1/2 teaspoon almond extract
1 – 21 ounce can peach pie filling (reserve ½ cup for topping, optional)
1/2 teaspoon cinnamon
2 tablespoons brown sugar
2 tablespoons sliced almonds
1 1/2 teaspoons butter, cut into small pieces

Directions:  
Preheat oven to 350°F. 

Spread bread cubes in 11 x 7-inch baking pan coated with cooking spray. Whisk together eggs, milk, granulated sugar and almond extract. Stir in pie filling, reserving ½ cup for use as a topping. Pour mixture over bread cubes; press into bread with back of spoon.Read more

Holiday Crunch Mix

Ingredient List: 

3 cups Wheat Chex™ or Rice Chex™ cereal
1 1/2 cups Cheerios™
1 cup pretzel sticks
1 cup cashews
1 cup M&M’s™, plain or peanut butter
8 squares vanilla almond bark

Description:
This makes a perfect gift and/or treat for the holidays.

Directions:  Line a 15 x 10 x 1-inch baking pan with waxed paper. In a large bowl, combine Wheat Chex™ cereal, Cheerios™, pretzels, cashews and M&M’s™.

In a heat-proof bowl, microwave the almond bark 2 to 3 minutes; stir occasionally until melted. Pour melted almond bark over the dry ingredients and stir gently just until coated.Read more

Fudge Brownies

Ingredient List: 

1 1/4 cups margarine
4 large eggs
2 cups sugar
1 1/2 cups all-purpose flour
2 teaspoons vanilla
3/4 cup cocoa
2 cups nuts (optional)

Directions:  
Preheat oven to 350°F. 

Melt butter and add cocoa; mix. Stir in sugar and blend in the eggs, one at a time. Add vanilla. Stir in flour and nuts; mix well. 

Bake in greased 9 x 13-inch pan for 30 minutes in preheated oven. Let cool on rack, 20 to 30 minutes. Cut into 20 square pieces.

Fruit Dessert Pizza

Ingredient List: 

1 -18 ounce package refrigerated sugar cookie dough
4 ounces cream cheese (1/3 less fat), softened
4 ounces frozen whipped topping, thawed
1 1/2 teaspoons sugar
1 -16 ounce can sliced light peaches, drained (reserve juice)
7 large fresh strawberries
1 to 2 medium kiwis
1 tablespoon cornstarch
1/3 cup sugar

Directions:  
Pre-heat oven to 350°F. 

Cut cookie dough into slices and arrange on a 12-inch pizza pan, coated with non-stick spray. Press slices together to form a solid crust. Bake 12 to 15 minutes until golden. Crust is done when edges begin to brown.

Beat cream cheese until smooth; add sugar and whipped topping. Spread evenly over cooled crust. Top with peach slices, strawberries, and kiwi.Read more

1 pound butter
2 cups sugar
2 cups brown sugar, packed
8 eggs
1/3 cup vanilla extract
8 cups all-purpose flour

Description: Great for birthday parties, wedding showers, or just as a treat. These are especially cute when created in the shape of a dress shoe! 

Directions:  
Cream butter and sugar; add eggs, one at a time. Add vanilla; mix in flour. Chill in refrigerator overnight.

Creamy Peach Sauce Over Angel Food Cake

Ingredient List: 

1 cup peaches (or berries of your choice)
1 cup sour cream (light)
1/2 cup brown sugar, packed
1/2 teaspoon vanilla
1 Angel Food Cake, sliced

Directions:  
Puree peaches in a blender. Combine with other ingredients and serve over Angel Food Cake. Garnish with peach slices.

Almond Cream Cheese Topping:
1- 8 ounce package reduced fat cream cheese
1/2 cup sugar
3 tablespoons reserved peach syrup (see filling ingredients)
1/2 teaspoon almond extract

Crumb Topping:
1/4 cup sugar
1 teaspoon cinnamon
2 tablespoons flour
2 tablespoons cold butter
1/4 cup almonds, sliced

Filling:
3/4 cup all-purpose flour
½ teaspoon salt
1 teaspoon baking powder
1 - 3.5 ounce package Cook and Serve Vanilla Pudding Mix
2 tablespoons softened butter
1 large egg
1/2 cup milk,
1% 1/2 teaspoon almond extract
1 - 15 ounce can sliced peaches in lite syrup, drained with 3 tablespoons reserved
1 - purchased shortbread pie shell

Garnish (Optional):
Whipped cream and/or reserved peach slices

Directions:  
Pre-heat oven to 350°F.

ALMOND - Cream together all of the ingredients until fluffy; set-aside.

CRUMB - Mix together sugar, cinnamon and flour. Cut in cold butter with a pastry cutter (or with two knives) until butter is in very small pieces. Add sliced almonds; set-aside.Read more

Cranberry Date Bars

Ingredient List: 

1 - 6 ounce package sweetened dried cranberries
1 - 8 ounce package chopped dates
1/2 cup water
1 teaspoon vanilla extract
1 cup whole wheat flour
1 cup all-purpose flour
2 cups old fashioned oats
1 cup brown sugar, packed
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1/2 cup margarine

Frosting - Optional
1 cup powdered sugar
1 to 2 tablespoons orange juice
1/4 teaspoon vanilla extract

Description: ** Fruit Variations: Dried, chopped apricots, cherries or apples can be substituted for the dried cranberries and dates. 1 - 12 ounce package of fresh cranberries can be substituted for the dried cranberries and dates. Simmer cranberries and 2 tablespoons water in saucepan over low heat, stirring occasionally until cranberries have popped.

Directions:  
Preheat oven to 350°F.

In a saucepan over low heat, simmer cranberries, dates and water, stirring constantly. Simmer until all water is absorbed; remove from heat. Stir in 1 teaspoon of vanilla; set aside.

In a medium bowl, combine whole wheat flour, all-purpose flour, oats, brown sugar, baking soda and salt. Stir in butter or margarine until well blended. Read more
