Whole Wheat Cinnamon Rolls

Ingredient List: 

1 package active dry yeast or quick-rise yeast
1/2 teaspoon sugar
1/8 cup warm water (105° to 115°F)
1 cup fat-free milk
1/4 cup sugar
1 teaspoon salt
2 tablespoons shortening
1 large egg
2 cups whole wheat flour
1 1/2 cups bread flour or all-purpose flour

1 cup brown sugar, packed
1/4 cup margarine
1/4 cup flour or cake crumbs
1 to 1 1/2 tablespoons fat-free milk
2-3 teaspoons cinnamon or to taste

Breakfast Biscuit

Ingredient List: 

2 cups all-purpose flour **
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup shortening
3/4 cup 2% milk

Directions: 
Preheat oven to 450°F.

In a bowl, stir together flour, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. Make a well in dry mixture; add milk all at once. Stir with fork just until dough clings together. Knead gently on lightly floured surface (10 to 12 strokes). Roll or pat dough to ½-inch thickness. Cut with 2½-inch biscuit cutter; dip cutter into flour between cuts. Bake on an un-greased baking sheet in preheated oven until golden, about 12 minutes.

Almond Breakfast Bread

Ingredient List: 

1 1/2 cups fat-free milk
4 cups bread flour
1 tablespoon gluten flour
1/4 cup almond paste E (cut into small pieces)
2 tablespoons sugar
1 3/4 teaspoons salt
2 tablespoons margarine
1 tablespoon almond extract
2 teaspoons active dry yeast

Directions: 
Add all the ingredients in the order listed into the bread pan. Follow the instructions for your machine. Let cool and then glaze, if desired.

Glaze
In medium bowl, mix 1 cup powdered sugar with 2 to 3 tablespoons milk and ½ teaspoon almond extract. Top with sliced almonds.

Be sure to use almond paste, not marzipan.

Very Berry French Toast

Ingredient List: 

4 eggs
1 tablespoon vanilla extract
1/4 teaspoon baking powder
1 cup fat-free milk
1 loaf French bread

Topping:
3/4 cup sugar
1 1/2 tablespoon corn starch
16 ounce package mixed frozen unsweetened berries (strawberries, blueberries or mixed berries)

(optional) Powdered sugar

Directions: 

Mix: eggs, vanilla extract, baking powder, and fat-free milk

Cut 8 – 1-inch thick slices of French bread.

Dip bread in egg mixture until well saturated, then place in 9 x 13-inch pan coated with cooking spray. Cover and refrigerate overnight.

Next morning, preheat oven to 450° F.

Light-as-a-Feather Whole Wheat Pancakes

Ingredient List: 

1 1/3 cups whole wheat flour
1 large egg
1 1/2 teaspoons baking powder
1 1/3 cups buttermilk
1/4 teaspoon salt
1 tablespoon brown sugar
1/4 teaspoon baking soda
1 tablespoon oil

Directions:
Preheat griddle.

In medium bowl, stir or sift dry ingredients together; beat egg, buttermilk, brown sugar and oil together. Stir into dry ingredients just until moistened; batter should be slightly lumpy.

Pour ¼ cup batter for each cake onto a well-seasoned hot griddle. Flip the pancake when bubbles appear on surface; turn only once.

Alternatives:

_ Omit soda, use 2 teaspoons baking powder and omit salt

_ Substitute 1 and 1/3 cup 1% milk w/1Tbsp. lemon juice or white vinegar added for buttermilk.Read more

Ingredient List: 

1 cup bran flakes cereal
1/4 cup wheat bran
1/4 cup wheat germ
1 1/2 teaspoons grated orange peel
1/4 cup orange juice
1 cup mixed dried fruit, chopped
1 egg, beaten
1/4 cup vegetable oil
1/2 cup applesauce
1/2 cup honey
1/3 cup dry milk powder
3/4 cup whole wheat flour
3/4 cup all-purpose flour
1/4 teaspoon baking soda

Directions: 
Preheat oven to 350ºF. Grease a 13 x 9x 2-inch pan.

In medium bowl, combine cereal, bran, wheat germ, orange peel, orange juice, dried fruit, egg, oil, applesauce, honey, and dry milk powder; blend well. Let set 5 minutes.

In large bowl, stir together whole wheat flour, all-purpose flour and soda. Stir in the first mixture and mix until all ingredients are combined.

Spread batter evenly in pan. Bake 15 to 17 minutes or until golden. Cool.

1 - 8 ounce package chopped dates
1/2 cup water
1 teaspoon vanilla extract

Dried, chopped apricots, cherries or apples can be substituted for the dried cranberries and dates.

1 - 12 ounce package of fresh cranberries can be substituted for the dried cranberries and dates. Simmer cranberries and 2 tablespoons water in saucepan over low heat, stirring occasionally until cranberries have popped.

Directions: 

Preheat oven to 350°F.

In a saucepan over low heat, simmer cranberries, dates and water, stirring constantly. Simmer until all water is absorbed; remove from heat. Stir in 1 teaspoon of vanilla; set aside.Read more

Cracked Wheat Cereal

Ingredient List: 

1 1/2 cups water
1/8 teaspoon salt
3/4 cup cracked wheat

Directions:
In a small saucepan, bring water and salt to a boil. Quickly stir in the cracked wheat and continue to stir to prevent lumps. Reduce heat to simmer, cover and cook about 15 minutes. Stir occasionally.

Serve with a variety of condiments such as chopped apples, raisins or other dried fruit, brown sugar, honey, cinnamon sugar, coconut, fresh berries or bananas.

Cinnamon Apple Couscous

Ingredient List: 

 

1 16-ounce can apples, pears or other fruit, divided

1 tablespoon butter

1, 10 ounce package couscous (7/8 cup)

3 tablespoons sugar

1/2 teaspoon cinnamon, or to taste

Directions:
Drain fruit, reserving juice. Pour juice into measuring cup and add water to equal 2 cups. Prepare couscous according to package directions using the fruit juice and butter.

Dice fruit; add to couscous. Combine sugar and cinnamon and mix with couscous. Place in serving bowl and sprinkle with additional cinnamon, if desired. Serve at room temperature or chilled.
