French Cookies

Ingredient List: 

1 pound butter
2 cups sugar
2 cups brown sugar, packed
8 eggs
1/3 cup vanilla extract
8 cups all-purpose flour

Description: Great for birthday parties, wedding showers, or just as a treat. These are especially cute when created in the shape of a dress shoe! 

Directions:  
Cream butter and sugar; add eggs, one at a time. Add vanilla; mix in flour. Chill in refrigerator overnight. 

Shape dough into 1-inch balls and place in the middle of the Belgi Galette (French Cookie) iron. Cook for approximately 45 seconds on each side.Read more

Carrot Pineapple Snack Cake w/Cream Cheese Frosting

Ingredient List: 

1 cup whole wheat flour
1 cup all-purpose flour
3/4 cup granulated sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/3 cup vegetable oil
1/3 cup unsweetened applesauce
2 eggs, beaten
1 cup grated carrots
1, 8 ounce can crushed pineapple, undrained
1 teaspoon vanilla extract Cream Cheese

Frosting:
2 ounces cream cheese, light
2 tablespoons butter or margarine
½ teaspoon vanilla extract
⅛ teaspoon salt
1 ¼ cups confectioners’ sugar
3 tablespoons chopped pecans

Description: A light snack cake.

Directions:  
Preheat oven to 350°F. 

Grease and flour bottom of a 9 x 9 x 2-inch pan.

In large mixing bowl, stir together whole wheat flour, all-purpose flour, sugar, baking soda, baking powder, cinnamon and salt; add vegetable oil, applesauce, eggs, carrots, pineapple and vanilla. Mix on low speed until moistened; beat 2 minutes at medium speed. Read more

Caramel Apple Bundt Cake

Ingredient List: 

3 large eggs 
2 cups sugar 
1 1/2 cups canola oil 
2 teaspoons vanilla extract 
3 cups cake flour
1 teaspoon salt
1 teaspoon baking soda 
3 cups apples, chopped and peeled (your choice) 
1 cup pecans, dried, unsalted, coarsely chopped

Caramel Sauce: 
1/2 cup margarine or butter
1/4 cup fat-free milk 
1 cup brown sugar, packed 
pinch of salt

Directions:  

Preheat oven to 350°F.
Grease and flour Bundt™ pan, set aside. 

In a mixing bowl, beat eggs until foamy; gradually add sugar; blend in oil and vanilla. Combine flour, salt and baking soda; add to egg mixture. Stir in apples and pecans. Pour into Bundt™ pan and bake for one hour or until cake tests done. Read more

Autumn Apple Pie & Double Pastry Crust

Ingredient List: 

8 cups sliced, tart cooking apples (7-8 medium apples)
3/4  cup sugar
3 tablespoons all-purpose flour (can use whole wheat flour)
1/8 teaspoon salt
1 teaspoon cinnamon
2 tablespoons butter (optional)
1 tablespoon lemon juice
2 (9”) refrigerated pie crusts (or you may use your favorite recipe)
1 tablespoon low-fat milk
1 teaspoon sugar

Directions

Preheat oven to 450° F. 

Wash apples; core and peel apples (or peel can be kept on for added fiber and chewier texture) and slice thin. In a large bowl, combine sugar, flour, salt and cinnamon. Combine sugar mixture, lemon juice and apple slices, tossing lightly to combine.

Turn into pastry-lined 9-inch deep-dish pie plate, mounding apples high in center; dot with butter (optional).Read more
