Cranberry Date Bars

Ingredient List: 

 

1 - 6 ounce package sweetened dried cranberries
1 - 8 ounce package chopped dates
1/2 cup water
1 teaspoon vanilla extract
1 cup whole wheat flour
1 cup all-purpose flour
2 cups old fashioned oats
1 cup brown sugar, packed
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1/2 cup margarine

FROSTING - OPTIONAL
1 cup powdered sugar
1 to 2 tablespoons orange juice
1/4 teaspoon vanilla extract

Description: ** Fruit Variations:
Dried, chopped apricots, cherries or apples can be substituted for the dried cranberries and dates.

1 - 12 ounce package of fresh cranberries can be substituted for the dried cranberries and dates. Simmer cranberries and 2 tablespoons water in saucepan over low heat, stirring occasionally until cranberries have popped.

Directions: 

Preheat oven to 350°F.

In a saucepan over low heat, simmer cranberries, dates and water, stirring constantly. Simmer until all water is absorbed; remove from heat. Stir in 1 teaspoon of vanilla; set aside.Read more

Apricot Streusel Scones

Ingredient List: 

 

Ingredients:
1 1/4 cups all-purpose flour
1/2 cup quick-cooking oats
3 tablespoons sugar|
2 1/2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup firm margarine or butter
2 large eggs, beaten, reserve 1 tablespoon
1/4 cup reduced fat sour cream
1/2 cup dried apricots, chopped
1 tablespoon milk, 2%

Streusel Mix:
1 tablespoon margarine or butter, melted
3 tablespoons brown sugar
1 tablespoon quick-cooking oats
1 tablespoon flour

Directions: Preheat oven to 350°F.

In medium bowl, mix together flour, oats, sugar, baking powder and salt. Using pastry blender or two knives, cut margarine into dry ingredients, until mixture looks like fine crumbs. Stir in eggs, sour cream, apricots and milk.Read more

Whole Wheat Orange Cinnamon Rolls

Ingredient List: 

1 1/4 cups warm water (110° - 115°F)
2 packages active dry yeast
1/2 cup nonfat dry milk powder
6 tablespoons butter, melted
6 tablespoons honey
1 egg, beaten
1 teaspoon salt
3 tablespoons wheat gluten
4 to 4 1/2 cups whole wheat flour

Filling:
1/4 cup butter, softened
1/3 cup honey
1/2 tablespoon orange peel, grated
2 teaspoons ground cinnamon
2 teaspoons flour

Whole Wheat Dream Shoe Cookies

Ingredient List: 

4 cups whole wheat flour
2 teaspoons baking powder
1 teaspoon salt
1 cup butter
1 cup honey
1 egg
1/4 cup hot water
2 tablespoons vanilla extract

Preheat oven to 350 F. 

Stir together whole wheat flour, salt, and baking powder; cut in butter until there are pea-sized lumps mixed in the flour. Add honey, egg, water, vanilla; mix just until dough will make a ball. Read more

Ingredient List: 

1 pound butter
2 cups sugar
2 cups brown sugar, packed
8 eggs
1/3 cup vanilla extract
8 cups all-purpose flour

Description: Great for birthday parties, wedding showers, or just as a treat. These are especially cute when created in the shape of a dress shoe! 

Directions:  
Cream butter and sugar; add eggs, one at a time. Add vanilla; mix in flour. Chill in refrigerator overnight. 

Shape dough into 1-inch balls and place in the middle of the Belgi Galette (French Cookie) iron. Cook for approximately 45 seconds on each side.Read more

Carrot Pineapple Snack Cake w/Cream Cheese Frosting

Ingredient List: 

1 cup whole wheat flour
1 cup all-purpose flour
3/4 cup granulated sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/3 cup vegetable oil
1/3 cup unsweetened applesauce
2 eggs, beaten
1 cup grated carrots
1, 8 ounce can crushed pineapple, undrained
1 teaspoon vanilla extract Cream Cheese

Frosting:
2 ounces cream cheese, light
2 tablespoons butter or margarine
½ teaspoon vanilla extract
⅛ teaspoon salt
1 ¼ cups confectioners’ sugar
3 tablespoons chopped pecans

Directions:  
Preheat oven to 350°F. 

Grease and flour bottom of a 9 x 9 x 2-inch pan.

In large mixing bowl, stir together whole wheat flour, all-purpose flour, sugar, baking soda, baking powder, cinnamon and salt; add vegetable oil, applesauce, eggs, carrots, pineapple and vanilla. Mix on low speed until moistened; beat 2 minutes at medium speed. Read more

Carmel Apple Bundt Cake

Ingredient List: 

3 eggs
2 cups sugar
1 1/2 cups canola oil
2 teaspoons vanilla extract
3 cups cake flour
1 teaspoon salt
1 teaspoon baking soda
3 cups apples, chopped and peeled (your choice)
1 cup pecans, coarsely chopped Carmel Sauce
1/2 cup margarine
1/4 cup fat-free milk
1 cup brown sugar, packed
pinch of salt

Directions:  
Preheat oven to 350°F.

Grease and flour bundt pan, set aside. 

In a mixing bowl, beat eggs until foamy; gradually add sugar; blend in oil and vanilla. Combine flour, salt and baking soda; add to egg mixture. Stir in apples and pecans. Pour into bundt pan and bake for one hour or until cake tests done. 

In a medium saucepan, combine all ingredients together; boil for 3 minutes, stirring constantly. Set aside.Read more

Ingredient List: 

5 to 7 medium sized tart cooking apples
3/4 to 1 cup sugar
2 tablespoons all-purpose flour
1/8 teaspoon salt
1 teaspoon cinnamon

⅔ cup shortening
5 to 6 tablespoons cold water

Directions:
Preheat oven to 450°F. 

Wash apples; core and peel apples and slice thin. In small bowl, combine sugar, flour, salt and cinnamon. Combine sugar mixture and apple slices, tossing lightly to combine.
