Cracked Wheat Bread

Ingredient List: 

1 cup boiling water
1/2 cup cracked wheat
2 to 2 1/2 cups bread flour, divided
1 package active dry yeast
1 teaspoon salt
1/2 cup low-fat cottage cheese
1/4 cup honey
2 tablespoons oil
1 egg, reserve 1/2 tablespoon egg white
1/2 cup whole wheat flour
1/2 cup quick cooking rolled oats
1/4 cup wheat germ, optional

Directions: 
In small bowl, pour boiling water over cracked wheat, stir and let stand 5 minutes.

Preheat oven to 450°F.

In large mixer bowl, combine softened cracked wheat, 1 cup bread flour, yeast, salt, cottage cheese, honey, oil and egg. Blend at low speed until moistened; beat 3 minutes at medium speed. Stir in whole wheat flour, oats, wheat germ and enough bread flour to make a soft dough.

Chocolate Chip Biscotti

Ingredient List: 

2 cups all-purpose flour
⅔ cup sugar
1 teaspoon baking soda
½ teaspoon salt
½ cup semi-sweet mini chocolate chips
3 large eggs, lightly beaten
1 teaspoon pure vanilla extract

Directions: 
Preheat oven to 350°F.

In medium bowl, mix together flour, sugar, baking soda, salt and chocolate chips. Add eggs and vanilla, stirring until blended. Turn dough onto lightly floured surface; knead 8 to 10 times. Form dough into a log about 2-inches wide and 16-inches thick.

Bugsy Bread

Ingredient List: 

1/2 cup brown sugar, packed
1/2 cup granulated sugar
1/2 cup vegetable oil
2 large eggs, slightly beaten
1 2/3 cups whole-wheat flour
1 teaspoon baking soda
3 large or 4 small finely grated carrots, enough for 1½ cups
1/4 teaspoon salt
3/4 teaspoon nutmeg
1 teaspoon cinnamon
1/2 cup raisins
1/2 cup pecans, chopped - optional

Directions: 
Preheat oven to 350°F.

Lightly grease bottom only of one 8½ x 4½-inch loaf pan.

In a large bowl, beat brown sugar, granulated sugar and oil for one minute, scrape bowl. Add eggs one at a time, beating well after each addition. Sift together whole-wheat flour, soda, salt, nutmeg, and cinnamon. Stir into bowl mixture just until dry ingredients are moistened. Fold in carrots, raisins and pecans.

Pour batter into prepared pan. Bake for 60 minutes or until toothpick inserted in center comes out clean.

Breakfast Biscuit

Ingredient List: 

2 cups all-purpose flour **
1 tablespoon baking powder
1/2 teaspoon salt
1/3 cup shortening
3/4 cup 2% milk

Directions: 
Preheat oven to 450°F.

In a bowl, stir together flour, baking powder and salt. Cut in shortening until mixture resembles coarse crumbs. Make a well in dry mixture; add milk all at once. Stir with fork just until dough clings together. Knead gently on lightly floured surface (10 to 12 strokes). Roll or pat dough to ½-inch thickness. Cut with 2½-inch biscuit cutter; dip cutter into flour between cuts. Bake on an un-greased baking sheet in preheated oven until golden, about 12 minutes.

Best Blueberry Muffin

Ingredient List: 

1 large egg
1/4 cup oil
1/2 cup milk, 2%
1 1/2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup blueberries; fresh, frozen or canned (drained)

Directions: 
Preheat oven to 400°F.

Spray bottoms of 2 1/2-inch muffin pan with non-stick cooking spray.

Beat egg until foamy in a small mixing bowl. Beat in oil and milk. In a separate bowl, sift together all dry ingredients. Stir in blueberries. Make a well in the center and pour in liquid ingredients. Mix together with a fork until dry ingredients are moistened; no more than 25 to 30 strokes. Batter will be lumpy.

Basil and Sun-Dried Tomato Pizza Crust

Ingredient List: 

2 1/2 cups bread or all-purpose flour, divided
1 tablespoon sugar
1 teaspoon yeast
1 teaspoon salt
1 tablespoon dried basil
1 cup very warm water (120 to130 degrees)
1 tablespoon olive oil or vegetable oil
1/3 cup chopped sun-dried tomatoes

Directions:  Preheat oven to 400°F.

In medium bowl combine 1 cup flour, sugar, yeast, salt and basil; mix thoroughly. Add water, oil and sun-dried tomatoes. Stir until almost smooth. Gradually add enough flour to form a firm dough. Turn dough onto a lightly floured board. Knead dough about 3 to 5 minutes, adding flour as needed, until not sticky. Place dough in a sealable bowl or plastic bag sprayed with cooking spray. Let rest 45 minutes. (This can be refrigerated up to 24 hours.)

Basic Focaccia

Ingredient List: 

1 1/2 cups warm water (105° to 115°F)
1 package active dry yeast
1 teaspoon sugar
4 to 4 1/2 cups bread flour
2 teaspoons salt
1/4 cup + 2 tablespoons olive oil, divided

Directions: 
Preheat oven to 450°F.

Combine water, yeast and sugar in large bowl. Let stand 5 minutes. Add 3 cups flour, salt and 1/4 cup olive oil. Mix by hand or with a dough hook until the dough forms into a rough ball.

Turn dough onto a lightly floured surface, using additional flour to knead. If using the mixer with a dough hook, add all but the last ½ cup of flour until certain it isn’t needed. Knead until smooth and elastic, about 5 minutes.

Banana Bread

Ingredient List: 

1/2 cup margarine
1 1/4 cups sugar
2 large eggs
1/2 cup light sour cream
1 cup mashed ripe bananas (over-ripe is best)
1 teaspoon baking soda
2 cups all-purpose flour **
1/4 cup (can use more) mini chocolate chips, optional

Almond Breakfast Bread

Ingredient List: 

1 1/2 cups fat-free milk
4 cups bread flour
1 tablespoon gluten flour
1/4 cup almond paste E (cut into small pieces)
2 tablespoons sugar
1 3/4 teaspoons salt
2 tablespoons margarine
1 tablespoon almond extract
2 teaspoons active dry yeast

Directions: 
Add all the ingredients in the order listed into the bread pan. Follow the instructions for your machine. Let cool and then glaze, if desired.

Glaze
In medium bowl, mix 1 cup powdered sugar with 2 to 3 tablespoons milk and ½ teaspoon almond extract. Top with sliced almonds.

Be sure to use almond paste, not marzipan.

Servings:   1, 2lb. loaf – about 12 slices (bread machine recipe)

Native American Tortillas in a Bag

Ingredient List: 

1 1/2 cups all-purpose flour*
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons shortening
1/2 cup hot water

Description: A popular wheat food that kids love to make and eat!!

Directions:
Preheat oven to 400°F.

In a large self-locking plastic bag, combine flour, baking powder and salt. Close bag and shake to mix. Add shortening and work into flour until fine particles form. Add the hot water and knead the dough in the bag until it forms a ball.

 

Remove dough from bag and place on a lightly floured work surface; knead 15 strokes. Divide into six equal pieces; shape into balls. Cover; let rest 15 minutes.Read more
