Cheese Sticks

Ingredient List: 

3 cups all-purpose flour (may use ½ whole wheat flour*)
1 package active dry yeast
¾ cup milk, warmed to 120-130 degrees
½ cup water 110-115 degrees
¼ cup shortening
1 Tbsp. sugar
1 tsp. salt
½ to 2/3 cup finely grated Parmesan cheese
2 Tbsp. Italian seasoning
Egg-wash: 1 egg beaten with 1 Tbsp. water

(can make in the dough cycle of a bread machine; follow the bread machine directions)

Olive Tapenade

Ingredient List: 

1 cup pitted black olives, drained
1/4 cup chopped fresh parsley
1/4 cup olive oil
1/8 teaspoon red pepper flakes
1/8 teaspoon hot sauce
1 clove garlic, minced
1 tablespoon fresh basil
1 tablespoon dried onion
1 tablespoon balsamic vinegar
2 tablespoons chopped pimentos

Directions: 

Combine the first nine ingredients in a food processor and blend until smooth. Stir in the pimentos and serve with pita bread wedges.
 
Servings: 18 (1/2 ounce servings)

Bruschetta

Ingredient List: 

12 slices, small Italian or French bread, toasted
3 large tomatoes, chopped
1 tablespoon olive oil
3 tablespoons chopped fresh basil
1/4 teaspoon salt 

Directions
Combine tomatoes, oil, basil and salt in a covered bowl and let marinate at least 4 hours (Do not refrigerate; tomatoes will lose their flavor).
Use a slotted spoon to layer on to bread.
Serve immediately.

Whole Wheat Tortilla Pinwheels

Ingredient List: 

 

1, 8 ounce package light cream cheese, softened
1 tablespoon taco seasoning
1/2 cup Picante sauce
1, 2 1/4 ounce can sliced black olives, drained
1/2 cup taco-style shredded cheese
3 tablespoons sweet red bell pepper, chopped
3 tablespoons sweet green bell pepper, chopped
7, 8-inch whole wheat flour tortillas

Directions:

In a medium bowl, mix together cream cheese, taco seasoning and picante sauce. Stir until smooth and well blended. Fold in black, olives cheese and peppers.

Place one tortilla on a plate; spread a thin layer of cream cheese mixture onto the tortilla. Fold sides of tortilla in, fold bottom of tortilla up, and roll to opposite end. Cut into ½ -inch slices and place pinwheels on a festive serving platter. Repeat with remaining tortillas. Serve immediately or cover and chill until serving time.

Native American Tortillas in a Bag

Ingredient List: 

1 1/2 cups all-purpose flour*
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons shortening
1/2 cup hot water

Description: A popular wheat food that kids love to make and eat!!

Directions:
Preheat oven to 400°F.

In a large self-locking plastic bag, combine flour, baking powder and salt. Close bag and shake to mix. Add shortening and work into flour until fine particles form. Add the hot water and knead the dough in the bag until it forms a ball.

 

Remove dough from bag and place on a lightly floured work surface; knead 15 strokes. Divide into six equal pieces; shape into balls. Cover; let rest 15 minutes.Read more

Ingredient List: 

3 cups Wheat Chex™ or Rice Chex™ cereal
1 1/2 cups Cheerios™
1 cup pretzel sticks
1 cup cashews
1 cup M&M’s™, plain or peanut butter
8 squares vanilla almond bark

Description:
This makes a perfect gift and/or treat for the holidays.

Directions:  Line a 15 x 10 x 1-inch baking pan with waxed paper. In a large bowl, combine Wheat Chex™ cereal, Cheerios™, pretzels, cashews and M&M’s™.

In a heat-proof bowl, microwave the almond bark 2 to 3 minutes; stir occasionally until melted. Pour melted almond bark over the dry ingredients and stir gently just until coated.Read more

Cranberry Date Bars

Ingredient List: 

1 - 6 ounce package sweetened dried cranberries
1 - 8 ounce package chopped dates
1/2 cup water
1 teaspoon vanilla extract
1 cup whole wheat flour
1 cup all-purpose flour
2 cups old fashioned oats
1 cup brown sugar, packed
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1/2 cup margarine

Frosting - Optional
1 cup powdered sugar
1 to 2 tablespoons orange juice
1/4 teaspoon vanilla extract

Description: ** Fruit Variations: Dried, chopped apricots, cherries or apples can be substituted for the dried cranberries and dates. 1 - 12 ounce package of fresh cranberries can be substituted for the dried cranberries and dates. Simmer cranberries and 2 tablespoons water in saucepan over low heat, stirring occasionally until cranberries have popped.

Directions:  
Preheat oven to 350°F.

In a saucepan over low heat, simmer cranberries, dates and water, stirring constantly. Simmer until all water is absorbed; remove from heat. Stir in 1 teaspoon of vanilla; set aside.
