Will a high-carbohydrate diet make me insulin resistant and, therefore, fat?
No, but being overweight may make you insulin resistant. Studies show that both weight loss through a sensible, low-calorie diet and increased exercise will decrease insulin sensitivity in obese people. If you think a high-carbohydrate diet makes people overweight, just look at the Chinese, Japanese and rural Africans!
