Whole Wheat Sugar Cookies
Ingredients:
1 cup packed brown sugar
1/2 cup butter, softened
1 egg
2 tablespoons 2% milk
1/4 teaspoon almond extract
1 teaspoon vanilla extract
2 cups whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon grated orange peel
1/4 teaspoon ground nutmeg
1 to 2 tablespoons sugar
Directions:
In a medium bowl, using an electric mixer, cream together sugar and butter until fluffy, about 3 minutes. Add egg, milk, extracts and mix well. Blend together flour, baking powder, soda, salt, nutmeg and orange peel. Add to egg mixture and continue to mix until well blended.
Shape dough into balls, using about 2 teaspoons each. Roll in granulated sugar. Place about 2 inches apart on cookie sheet coated with cooking spray. Flatten cookie slightly. Bake in a preheated 375°F oven for 9 to 10 minutes or until golden brown. Cool on pan for 2 minutes and transfer to wire rack.

I can't tell you how many times I've made this great recipe - as well as sharing it with people who are just getting started using whole wheat flour. I mill my own flour and use white wheat varieties, which are lighter in color and less acidic in flavor than red wheat. Even "whole wheat haters" are surprised to find out these are 100% Whole Wheat...
