Whole Wheat Raisin Cookies
Ingredients:
1/2 cup butter or margarine, softened
1/4 cup sugar
1/2 cup packed light brown sugar
2 eggs
1 cup uncooked quick-cooking oats
3/4 cup whole wheat flour
3/4 cup raisins
1/2 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon baking soda
Directions: Preheat oven to 375°F.

In a large bowl with mixer at medium speed, beat all ingredients until well mixed, occasionally scraping the bowl.

Drop by teaspoonfuls, 1-inch apart, on cookie sheet.

Bake 10 to 12 minutes or until lightly browned. Immediately remove cookies to wire racks; cool.
Servings: Makes 36 cookies
Nutrition: Each cookie provides approximately: 71 calories, 1 g protein, 10 g carbohydrates, 3 g fat (0 g saturated), 1g fiber, 12 mg cholesterol, 2 mcg folate, 0 mg iron, 77 mg sodium.

These cookies are a hit!!! I have been baking them every week for a couple of years now. My family and friends are always happy when I bake them.

This recipe is fantastic!! As did some of the others, I "lightened" it up with flaxseed and yogurt. I then spread the cookie dough in an 8 x 8 pan and baked for 30 minutes and - BAM - healthy "bar" cookies so delicious, so satisfying and so easy!! Next batch, I'm going to try adding sliced apples.

GREAT RECIPE!! I substituted OLIVE OIL instead of butter and HONEY instead of sugar. NO SALT and I only used 1 egg. Plus, I added GROUND FLAXSEED, FIBER ONE CEREAL, and WALNUTS...

WOW! I was amazed how yummy they were.

I was looking to make a great tasting higher fiber cookie and these are definitely what I was hoping for. I added about 1/3 cup of "Nature's Path Smart Bran" cereal for extra crunch and chocolate chips instead of the fruit. Definitely keeping this recipe!!!

my husband is meat and potatoes, will only eat green beans, corn, peas and broccoli. Sometimes I substitute apple sauce for the oil in brownies. Says he can tell but only after I tell him what I did.
