Whole Wheat Pasta with Veggies
Ingredients:
1 cup diced pepper
1 cup diced poblano, pasilla or anaheim pepper
1 cup diced onion
2 cloves diced garlic
1 cup diced tomato
1/2 cup cilantro (optional)
1/4 cup diced scallions
8 ounces whole wheat Pasta
2 tablespoons olive oil
1/2 cup Asiago or Romano grated cheese
Description:
Have been doing this for the whole family including grand kids and their fussy parents for two years and they love it. The Poblano pepper adds just enough interest to the dish to make you want more.
You could add Italian, Polish or Charizo saugage.
Directions:
Cook pasta according to package directions. Saute the first 5 ingredients until just soft with a tablespoon olive oil. Add the cooked pasta and additional tablespoon of oil. Stir for 2 minutes. Pour into bowl and sprinkle the cilantro, scallions, and cheese.
