Whole Wheat Chocolate Sheet Cake
Ingredients:
2 1/2 cups whole wheat flour
1 cup sugar
2 teaspoons cinnamon
1/4 cup cocoa
1 cup water
1/2 cup vegetable oil
1 1/2 teaspoons baking soda
1 cup buttermilk
2 large eggs, beaten
1 teaspoon vanilla
Icing:
1/2 cup butter or margarine
3 to 4 tablespoons milk, 2%
3 cups confectioner’s sugar
1 teaspoon vanilla extract
1 cup flaked coconut
Directions: Preheat oven to 350°F.

CAKE: Mix flour, sugar and cinnamon together in a large bowl. Bring cocoa, water and oil to a boil. Pour over flour mixture and mix 1 minute, scraping bowl.

Dissolve soda in buttermilk, adding to mixture in bowl along with eggs and vanilla. Mix an additional 2 minutes.

Pour into greased and floured 10 x 15 x 1-inch jelly roll pan. Bake 20 minutes. Ice cake, if desired, while cake is still slightly warm.

ICING: In a saucepan, melt butter or margarine; add milk and heat. Boiling is not necessary. Remove from heat and add confectioner’s sugar and vanilla extract; stir vigorously until smooth and glossy. Add more milk only if frosting isn’t fluid enough to spread easily. Spread over slightly warm sheet cake and immediately sprinkle with coconut. When cake is cool, cut into 24 servings.

Nutrition: Each serving (with icing) provides approximately: 231 calories, 3 g protein, 34 g carbohydrates, 10 g fat (4 g saturated), 2 g fiber, 28 mg cholesterol, 3 mcg folate, 1 mg iron, 133 mg sodium.

I made this cake & ate the whole thing on my own, i now have sore lips as it was still too hot, im planning on making another one for my breakfast tomorrow. Its nice if you put in a blender with ice cream for a healthy smoothie.

Just a question - it looks delicious, bu somehow the picture doesn't look like you used a jelliy roll pan 10 X 15. This looks a lot thicker. Thank you for your help

hi i am 10 and me and my brother and sister made this cake for my moms birthday .are grandparents came that night.
we added chocolat chips and penut butter chips and becons.
it is so good.I have a recipe it is pancakes. make them like you normaly would but use whole wheat

I have made this cake twice. Once we used whole wheat flour and once we used whole wheat pastry flour. The cake was amazing with the whole wheat pastry flour. I would recommend making that substitution.

Easy to make and it tastes pretty good for a wheat cake. I added a bit more sugar to suit my taste, but didn't make it too sweet since I plan to use store bought frosting. Mine didn't turn out dark or as thick as the picture, but think I will cut the pan in half and layer it. Bet this will be great with ice cream!!!
