What is the benefit of grinding whole grain at home vs. the whole wheat bread purchased in the store
The value of grinding your own wheat is to say you can. There is no nutritional difference in whether you grind it or the mills grind it. Mills grind the whole kernel, just like you would. The only difference could be that some millers may add ascorbic acid as a dough conditioner or enzymes usually from malted barley (as food for the yeast in baking). If they make these additions, it must say so on the package. Neither affects the nutritional value of the flour. Many companies just use plain whole wheat flour in the bag. Keep your whole wheat flour in an air-tight container and you can store it in the refrigerator or freezer for up to 3 months before the germ will turn rancid.
