Q. - Whole Wheat Muffins
Ingredients:
8 pound whole wheat flour
3 ounces baking soda
1 tablespoon salt
1 1/2 pounds margarine
1 1/2 pounds granulated sugar
1 1/2 pounds brown sugar
12 eggs
1/2 ounce vanilla extract
3 quarts milk, low-fat
Directions: Preheat oven to 400 degrees F.
Combine flour, baking soda and salt. Blend them well and set aside.

In a mixer bowl, cream margarine and sugars. Add eggs and vanilla. Beat until they are well blended. Alternately add flour mixture and milk until mixture is moist.

Pour 2/3 cup into each of the 100 muffin cups. Bake the cups for 15 to 17 minutes or until muffins are brown. Remove from oven and cool on racks before serving.
Bake Temperature: 400 degrees F.
Bake Time: 15 to 17 minutes
Servings: 100 muffins
Calories/Serving: 248
Nutrition: One muffin provides approximately: 248 calories, 7 g protein, 50 g carbohydrates, 8 g fiber, 7 g fat (2 g saturated), 27 mg cholesterol, 2 mg iron, 199 mg sodium.
