Q. - Neat Wheat Joes
Ingredients:
18 pounds ground beef, raw (80/20)
2 cups onion, chopped
1 tablespoon garlic powder
1 pound, 7 ounces bulgur dry OR cracked wheat cereal, dry
2 tablespoons chili powder
2 tablespoons oregano, leaf
2 1/4 quearts beef broth
2 quarts tomato puree
1 quart water, hot
Directions: Brown beef and drain. Add remaining filling ingredients to meat. Stir to blend.

Bring to a boil; reduce heat and simmer, stirring frequently, for 45 minutes or until bulgur is soft and mixture is thick.

Serve filling on a split bun; or, for variations, serve on nachos and in tacos or taco salad.

Note: If mixture is dry, add a small amount of water.
Utensils Needed: Use a # 12 dipper for serving size
Servings: 120 - 1/3 cup servings
Calories/Serving: 188
Nutrition: One serving provides approximately: 188 calories, 14 g protein, 6 g carbohydrates, 12 g fat (5 g saturated), 47 mg cholesterol, 1 g fiber, 7 mcg folate, 2 mg iron, 176 mg sodium.
