Grilled Cheese and Pickle Sandwich
Ingredients:
4 slices yellow American cheese
4 slices Muenster cheese, thinly sliced
Dill pickles, sliced lengthwise
8 slices sourdough bread
Directions:
Heat a large, heavy skillet or griddle over medium heat (about 300°F).
Place one slice of American cheese on sourdough bread, top with 4 dill pickle slices, add slice of Muenster cheese and second slice of bread. Continue with remaining ingredients to make four sandwiches. Lightly butter one side of each sandwich (or coat with butter-flavored cooking spray) and place buttered side down on skillet or griddle. Butter the top slice of each sandwich. Grill slowly on both sides until cheese has melted and bread has browned. Serve warm.

I'm a big fan of grilled cheese, but had never had it with pickles before now. It's wonderful!
