Does whole wheat pastry flour have the same nutrients as whole wheat flour? Are they interchangeable
Whole wheat pastry flour and regular whole wheat flour are nutritionally the same, but are really not interchangeable. Pastry flour is very fine and soft, where as regular whole-wheat flour is a course ground. It would weigh your pastries/cakes down. However, it is possible to go half and half (whole wheat and all-purpose) for cakes.
