Cracked Wheat Cereal
Ingredients:
1 1/2 cups water
1/8 teaspoon salt
3/4 cup cracked wheat
Directions: In a small saucepan, bring water and salt to a boil. Quickly stir in the cracked wheat and continue to stir to prevent lumps. Reduce heat to simmer, cover and cook about 15 minutes. Stir occasionally.

Serve with a variety of condiments such as chopped apples, raisins or other dried fruit, brown sugar, honey, cinnamon sugar, coconut, fresh berries or bananas.

Servings: 4, 4-ounce
Nutrition: One 4-ounce serving provides approximately: 76 calories, 3 g protein, 16 g carbohydrates, 3 g fiber, 0 g fat, 0 mg cholesterol, 10 mcg folate, 1 mg iron, 76 mg sodium.

The recipe is great! Please be aware that lower calories does not always equal healthier, but only sometimes. The comment about fat substitutes is what provoked me to make this note, along w/the splenda note. So..butter may not be the most healthy ingredient in the world, but there is scientific research that proves that it's healthier than many substitutes. Salt isn't the greatest either, but you can add a tad of salt to an Extra Virgin Olive Oil to make it resemble butter. BTW...look out because some evoo's carry a heavy flavor which wouldn't be great for some applications. Also, I'd personally suggest trying Doctor Grandma's Delight which is a zero cal sweetener, but it's all-natural, unlike many of the decent tasting sugar substitutes out there. Thanks, Wheat Foods!

You can also eliminate the salt and/or use a no calorie sweetner and butter substitute like "Splenda" and I" Can't Believe It's Not Butter". It tastes great and keeps the calorie count down.

cracked wheat makes excellent cereal for breakfast. i eat it at least twice a week
