Chicken and Noodles
Ingredients:
2 cups cooked chicken breasts, diced
6 cups chicken broth
1 pound egg noodles
1/2 medium sweet red pepper, chopped
1/2 medium sweet green pepper, chopped
1/2 large onion, cut into rings
8 ounces fresh mushrooms, sliced or 1-4 ounce can sliced mushrooms
Salt and pepper to taste
Directions: Place chicken in a large pot with broth. Add peppers and onions; simmer 10 minutes. Add noodles and cook according to package directions. Five minutes before noodles are done, add mushrooms. Serve hot.
Servings: 10 - hearty 1 cup servings
Calories/Serving: 243
Nutrition: Each serving provides approximately: 243 calories, 16 g protein, 35 g carbohydrates, 2 g fiber, 4 g fat (1 g saturated, 0 g trans), 65 mg cholesterol, 111 mcg folate, 3 mg iron, 628 mg sodium.
