Can white and wheat flour be substituted for each other in most recipes?
Whole wheat flour may be substituted in equal portions (minus 1 tablespoon per cup) for all-purpose or bread flour.

The Wheat Foods Council promotes both whole wheat and enriched flours. Whole wheat has many benefits, but so does enriched white. They both offer nutrients for fighting disease. Both whole and enriched grains are important sources of complex carbohydrates, and, while the public does not eat enough whole grains, they should not give up enriched.

Remember, common sense still works.
