Bugsy Bread
Ingredients:
1/2 cup brown sugar, packed
1/2 cup granulated sugar
1/2 cup vegetable oil
2 large eggs, slightly beaten
1 2/3 cups whole-wheat flour
1 teaspoon baking soda
3 large or 4 small finely grated carrots, enough for 1˝ cups
1/4 teaspoon salt
3/4 teaspoon nutmeg
1 teaspoon cinnamon
1/2 cup raisins
1/2 cup pecans, chopped - optional
Directions:
Preheat oven to 350°F.
Lightly grease bottom only of one 8˝ x 4˝-inch loaf pan.
In a large bowl, beat brown sugar, granulated sugar and oil for one minute, scrape bowl. Add eggs one at a time, beating well after each addition. Sift together whole-wheat flour, soda, salt, nutmeg, and cinnamon. Stir into bowl mixture just until dry ingredients are moistened. Fold in carrots, raisins and pecans.
Pour batter into prepared pan. Bake for 60 minutes or until toothpick inserted in center comes out clean.
Cool 10 minutes; remove from pan. Cool completely on wire rack.

1-loaf or 16 servings (slices)

sounds great but it 100% whole wheat gluten free?

1/2 c oil is A LOT. That makes this recipe NOT healthy. There are many options for fat substitutes. Also, 35 servings from a loaf of bread is unrealistic. They would be paper thin.

This is the first time I have seen your receips, I have a question. I have a great receipe from my mother-in-law. It is 100% whole wheat, etc. It is very crumbly, can you help. I will certainly try your whole wheat breads. Thank you very much.

Delicious! This is a hearty/ wholesome recipe.
We used the brown sugar, but substituted the white sugar for splenda. We also added a tsp of natural vanilla extract, and lots of nuts.

I made this bread, but added carrots in it also. I also substituted some of the oil for apple sauce. You can add coconut and other dried fruits to this, and make it into muffins. The basic recipe is there, use your imigination and add your favorites!
