Almond Chicken Bagel Sandwiches
Ingredients:
3 whole bagels of choice, sliced
1 3/4 cups chicken (12.5 ounce can chicken breast in water, drained)
1/3 cup diced celery
1/2 cup halved seedless grapes
1/2 cup sliced olives with pimento
1/4 cup slivered almonds
1/4 cup fat-free mayonnaise
1 1/2 teaspoons lemon juice
1/4 teaspoon curry powder
1/8 teaspoon lemon pepper
curly leaf lettuce
Directions: In medium bowl, combine chicken, celery, grapes, olives and almonds. In a small bowl mix together mayonnaise, lemon juice, curry powder and lemon pepper. Combine with chicken mixture. Chill for two hours.

Place lettuce on 3 slices of bread and divide the chicken mixture between the 3 sandwiches. Cover with additional bread slices.
Servings: 3 sandwiches
Calories/Serving: 619
Nutrition: Each serving provides approximately: 619 calories, 48 g protein, 73 g carbohydrates, 6 g dietary fiber, 16 g fat (2 g saturated), 91 mg cholesterol, 20 mcg folate, 6 mg iron, 1539 mg sodium.

lil high in calories, but can watch intake rest of day, maybe use whole wheat rolls-73 carbs is ok good carbs
sodium way too high-using real chic cook or steamed will control that, this is a great recipe, thanks!
