100% Whole Wheat Hearty Waffles
Ingredients:
1 cup Whole Wheat Flour
1/4 cup Oat Bran
1/4 cup Wheat Bran
2 tsp Baking Powder
1/4 tsp Salt
1 TBS Sugar
1/4 cup Flax Seed Meal
1 Egg
1 cup Soy Milk (plain or vanilla; or regular Milk)
2 TBS Canola Oil
Description: My children request waffles every morning and I got tired of buying ready-made, just add water mixes full of processed ingredients. I buy everything in bulk and make individual batches in advance so all I have to do is add "wet" ingredients and flax seed meal (stored in fridge for freshness) just before cooking. The kids get off to school on time every morning with a healthy, hearty breakfast that doesn't cost much time or money.

You can use regular milk instead of soy milk and even add 1/4 cup of cornmeal to dry ingredients for a different variation. You may need to increase milk slightly if batter is too thick.

If you have leftover waffle squares, just freeze them and warm them in your toaster for a quick snack.
Directions: Mix whole wheat flour, oat bran, wheat bran, baking powder, salt, and sugar in a bowl. Stir with spoon or spatula in remaining ingredients: flax seed meal, egg, soy milk (milk), and oil. Batter is thicker than pancake mix. Bake batter according to your wafflemaker's direction.

Bake Time: Follow manuf. guidelines (1-2 minutes)
Time To Prepare: 5 minutes plus baking time
Servings: 10 to 12 individual waffle squares

I omitted the oat bran and wheat bran, adding extra whole wheat flour in its place. They turned out great! Definitely a repeat recipe for our family. Thanks!
